Ingredients Needed

  • ½ pound ground elk
  • ½ pound ground breakfast sausage
  • 1 Tbsp. olive oil
  • ½ tsp. salt – divided
  • ½ tsp. pepper – divided
  • 1 Tbsp. unsalted butter
  • 9 eggs
  • 2 sheets puff pastry (17-ounce) box 
  • 1/2 cup shredded monterey jack or cheddar cheese

How to Make Elk Breakfast Hand Pies

  1. In a skillet, heat the olive oil over medium heat and add the ground elk and sausage. Season with salt and pepper and cook until no longer pink and set aside. 
  2. In a separate skillet, melt the butter over medium heat. Then, add the eggs, season with salt and pepper and scramble. Set aside to cool completely. 
  3. Place 2 sheets of puff pastry dough onto a lightly-floured surface and unfold. Cut each sheet into 6 rectangles, 12 total. Place 6 of the rectangles in a single layer onto a lined baking sheet.
  4. Leaving a 1/2-inch border, divide the shredded cheese among the six rectangles. Then, divide the cooled scrambled eggs over the cheese, then top each with the cooked elk mixture.
