Crafting your own marinade gives you flexibility to adjust the flavors accordingly to your palette. Not to mention, you can utilize some of the items that you might already have on the counter, in the pantry or in the fridge.

Citrus juice is a fantastic ingredient to use for marinading steaks. The acidic liquid doesn’t over power the meat, but instead adds subtle and fresh hints to each and every bite. I have marinaded wild game meat with orange juice for a elk-broccoli stir-fry as well as lemon juice for elk gyros.

Try this a tangy mixture of grapefruit juice, minced garlic, cumin, coriander, salt, freshly ground peppercorns and olive oil for a flavorful grilled wild game dish.

Grapefruit Marinated Elk Steak

Ingredients

  • Juice from 2-3 grapefruits, about 3/4 to 1 cup
  • 1/2 cup olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon ground peppercorns

Instructions

  1. Combine all marinade ingredients in a small bowl.
  2. Trim the meat and set in a shallow baking dish. Pour the marinade over the meat, cover and marinate in the refrigerator for 4-6 hours or overnight.
  3. When ready, remove the meat from the marinade and grill.
