If you’re looking for something new to cook with your venison roast this year, you’re going to definitely want to try this venison reuben sandwich using corned venison. I’ll walk you through how to made homemade corned venison using your roast – and then from there you can create this hearty sandwich.

How to Make Homemade Corned Venison

Time needed: 5 days

  1. Mix together the Morton Tender Quick, brown sugar, black peppercorns, paprika, allspice, and garlic powder.
  2. Rub the seasoning all over you 3-5 pound venison roast, covering it heavily. 
  3. Place the seasoned roast into a resealable bag and place in the refrigerator. The meat will need to cure for at least five days – turning the bag once daily. 
  4. Once the venison has cured for five days, it’s ready to be cooked and prepared for the venison reuben sandwiches. See further details in the recipe below.
