Desserts That Beat the Heat: Mini Fruit Pizzas

Are you looking for a sweet treat for your Fourth of July celebration? These easy mini fruit pizzas are definitely desserts that beat the heat. The ingredients can all be store-bought, packed in a cooler and taken to your party destination. Assemble the pizzas on-site, allowing each to be customized to its consumer’s tastes.

We are huge fans of easy recipes here at Women’s Outdoor News. In the past, we’ve written about easy air fryer venison, rocky road fudge and donut hole acorns. These mini fruit pizzas have earned a spot on that repeat roster of our favorite recipe posts.

Mini Fruit Pizza Ingredients

Gather the following items:

  • Store bought cookies (Don’t heat up the kitchen! We used the snickerdoodle variety.)
  • Fresh fruit – strawberries and blueberries serve well for a patriotic dish
  • Tub of whipped cream cheese spread

Making Desserts That Beat the Heat

First, wash all the produce and slice any fruit that needs to be smaller (not the blueberries). If you are taking these on-the-go, pack all the ingredients in your cooler. Grab a serving platter to use at your destination.

When ready to serve, place each cookie on the serving plate or platter. Next, liberally top each cookie with the cream cheese spread.

Then, apply fruit to your heart’s content. My little helpers (ages two and five) really enjoyed decorating these mini fruit pizzas. We placed the finished “pizzas” in the fridge and enjoyed them after dinner that evening.

These treats start to get a little squishy after being stored for more than a day. It would be best to make these and serve them within the same day.

The kids enjoyed making these pizzas, and loved eating them. They’ve requested to make more!

Patriotic Fruit Sparklers

Have some leftover blueberries? Grab some wooden skewers, a watermelon and a star-shaped cookie cutter and make these easy fruit sparklers. The watermelon stars can be cut up ahead of time, and packed in the cooler. Assemble these sparklers at the party!
