Wild Game Steak Graze Board

We all love to grill wild game steaks, but have you ever considered using your wild game steaks for a beautiful graze board? We love graze boards at our house. They’re perfect for entertaining family and friends, or for when we don’t feel like cooking a whole meal, but want to graze throughout the day instead.

We’ll walk you through how to create a beautifully delicious wild game steak board with The Honest Bison’s bison NY strip steaks – but any wild game steak will work, too!

INGREDIENTS NEEDED

  • 2 – 9 oz The Honest Bison – Bison NY Strip Steak
  • 1 Tbsp. olive oil
  • 2 Tbsp. steak seasoning
  • 1-2 oz. cheese per person
    • Blue Cheese
    • Swiss Cheese
    • Sharp Cheddar
  • 2-3 sauce options
    • Horseradish
    • Spicy mustard
    • Sweet/hot mustard
  • Fresh fruit
    • Strawberries
    • Blueberries
    • Raspberries
    • Watermelon
  • Grilled vegetables
    • Zucchini
    • Squash
    • Eggplant
    • Red onion
    • Fresh tomatoes
  • Toasted sourdough bread
  • 2 Tbsp. unsalted butter – melted

HOW TO PUT TOGETHER A WILD GAME STEAK GRAZE BOARD

  1. Preheat the grill or smoker to 425-450 degrees F. (medium-high)
  2. Bring the bison steaks to room temperature. Then, brush with olive oil and season both sides with steak seasoning of your choice. 
  1. Grill 4-5 minutes on each side, or until the internal temperature reaches the 130-135 degrees F. medium-rare point. 
  2. Remove steaks from the grill and let completely cool. 
  3. Bring the grill temperature to high. 
  4. Add the sliced vegetables to the grill and sear on both sides for about 2 minutes, then remove.
